The Skinny Pancake

Brittany Sperber (Director of Development, The Skinny Pancake): Hailing originally from Southern New York State, I'm a 15+ year food service professional, and for the last 13 years I have been working with the Skinny Pancake in Vermont. I started with The Skinny Pancake as a line cook in 2010 and quickly rose through the ranks, and I've led the opening of 4 new Skinny Pancake restaurant locations in New Hampshire, Vermont and New York, with 2 more upcoming in 2024.

I earned a Bachelors of Arts from the University of Vermont in Environmental Studies, Food Systems and French, as well as a Certificate in Permaculture Design. I've also completed UVM's 8-week Project Management Practice Certificate, which has been a foundation for successful projects since. When I'm not working, I love taking long walks with my dog Ruby, kayaking, gardening and going to see live music.
